How to make a delicious pea puree
  • 650 grams of frozen peas
  • 1 onion
  • 3 cloves of garlic
  • 2 tablespoons extra virgin olive oil
  • piece of cheese in pieces
  • 700 ml chicken stock
  • juice of half a lemon
  • 1 bay leaf
  • salt and pepper to taste

Preparation

  • First boil the peas for 5 to 7 minutes in a pan with some water. When they are done, drain them and set them aside. It is not recommended to overcook them, otherwise they will lose their characteristic color.
  • Peel and then cut the onion into small cubes and the garlic into larger pieces. Put the olive oil in the frying pan or a saucepan and fry both ingredients.
  • After 3 minutes, add the bay leaf and peas. Fry everything for a few more minutes on medium heat and make sure everything is well mixed. Then add the cheese.
  • Then let it stand for a few minutes with the fire off. The cheese will melt.
  • Place all contents in a blender or bowl. Then add a little chicken stock and mix. Then add more until the desired texture is obtained.
  • For a different and fresher taste, add  a few sprigs of mint or parsley while mixing. Adding some avocado will give you a much creamier texture.

For a vegan version of this recipe, replace the cheese with a little tofu or soy cream or oatmeal. In addition, replace the chicken stock with vegetable stock. A 100% plant-based dish that everyone can enjoy, even those with a lactose intolerance and those with a cow’s milk protein allergy.

  • 650 grams frozen or fresh peas
  • ½ onion
  • 2 cloves of garlic
  • 1 pinch of cumin
  • 700 ml chicken or vegetable stock
  • 1 teaspoon butter or extra virgin olive oil
  • salt and pepper
  • 1 tablespoon coffee milk or coconut milk

Step by step preparation of this pea puree

  • First, boil the peas in a pan with some water and salt. When the peas are frozen, immediately put them in the pan without thawing. They are usually ready in about 5 minutes. In any case, it is advisable to taste them to determine the correct doneness.
  • Peel and chop the onion and garlic. Melt the butter in a frying pan over low heat and sauté the onion and garlic for about 2 minutes.
  • When they start to turn translucent, it’s time to add the drained peas. Season with salt and pepper and cook for a further 2 minutes.
  • Then add the coffee creamer or coconut milk while the fire is off. Then stir a little to mix everything together and then let it rest for a few minutes.
  • Now it’s time to put everything in the blender. Then add the stock little by little, depending on the desired texture. Blend until you have a puree texture.

Once you’ve scooped the pea puree into a bowl, you can add some diced Serrano ham, croutons, a little shredded cheese, or sesame seeds as a garnish.
